summer fresh endive and fruit salad

Ingredients

  • 454 g (1 lb) of endives
  • 3 red endives
  • 125 ml (½ cup) fresh parsley, chopped
  • 125 ml (½ cup) fresh basil, chopped
  • 2 peaches or apricots, cut into quarters
  • 125 ml (½ cup) fresh raspberries
  • 12 fresh strawberries, cut into halves
  • 125 ml (½ cup) plain yogurt
  • 5 ml (1 tsp) Dijon mustard
  • 5 ml (1 tsp) honey
  • 30 ml (2 tbsp) wine vinegar
  • Salt and pepper to taste

Directives

  • Cut endives in half, remove tough base and chop coarsely. Transfer to a large bowl, add in parsley, basil and fruit. Set aside.
  • In a bowl, combine yogurt, mustard, honey, wine vinegar, salt and pepper.
  • Just before serving, pour yogurt dressing over salad and toss well.

Variante

You can replace basil with fresh mint.
