summer fresh endive and fruit salad

Ingredients
- 454 g (1 lb) of endives
- 3 red endives
- 125 ml (½ cup) fresh parsley, chopped
- 125 ml (½ cup) fresh basil, chopped
- 2 peaches or apricots, cut into quarters
- 125 ml (½ cup) fresh raspberries
- 12 fresh strawberries, cut into halves
- 125 ml (½ cup) plain yogurt
- 5 ml (1 tsp) Dijon mustard
- 5 ml (1 tsp) honey
- 30 ml (2 tbsp) wine vinegar
- Salt and pepper to taste
Directives
- Cut endives in half, remove tough base and chop coarsely. Transfer to a large bowl, add in parsley, basil and fruit. Set aside.
- In a bowl, combine yogurt, mustard, honey, wine vinegar, salt and pepper.
- Just before serving, pour yogurt dressing over salad and toss well.
Variante
You can replace basil with fresh mint.
