BBQ endives with prosciutto

Ingredients

  • 454 g (1 lb) of endives
  • 45 ml (3 tbsp) olive oil
  • 5 ml (1 tsp) lemon juice
  • 5 ml (1 tsp) fresh rosemary, chopped
  • 1 garlic clove, chopped
  • 5 ml (1 tsp) sugar
  • 10 to 12 slices prosciutto ham
  • 45 ml (3 tbsp) chives, chopped
  • 15 ml (1 tbsp) balsamic vinegar
  • Vegetable oil
  • Salt and fresh ground pepper to taste
  • Fresh Parmesan cheese (optional)

Directives

  • Preheat BBQ to medium heat. Brush grill with vegetable oil.
  • Cut endives in half and remove tough base. Set aside.
  • Combine olive oil, lemon juice, rosemary, garlic, sugar, salt and pepper in a bowl. Brush each endive halves with mixture, then close together to form whole endives again.
  • Wrap a slice of prosciutto around each endive. Barbecue 2-3 minutes per side.
  • Transfer to a serving platter, garnish with chives and sprinkle with balsamic vinegar. Top with Parmesan cheese (optional).
