BBQ endives with prosciutto

Ingredients
- 454 g (1 lb) of endives
- 45 ml (3 tbsp) olive oil
- 5 ml (1 tsp) lemon juice
- 5 ml (1 tsp) fresh rosemary, chopped
- 1 garlic clove, chopped
- 5 ml (1 tsp) sugar
- 10 to 12 slices prosciutto ham
- 45 ml (3 tbsp) chives, chopped
- 15 ml (1 tbsp) balsamic vinegar
- Vegetable oil
- Salt and fresh ground pepper to taste
- Fresh Parmesan cheese (optional)
Directives
- Preheat BBQ to medium heat. Brush grill with vegetable oil.
- Cut endives in half and remove tough base. Set aside.
- Combine olive oil, lemon juice, rosemary, garlic, sugar, salt and pepper in a bowl. Brush each endive halves with mixture, then close together to form whole endives again.
- Wrap a slice of prosciutto around each endive. Barbecue 2-3 minutes per side.
- Transfer to a serving platter, garnish with chives and sprinkle with balsamic vinegar. Top with Parmesan cheese (optional).
