endive and pear grilled cheese sandwich

Ingredients
- 454 g (1 lb) of endives
- 1 pear, thinly sliced
- 5 ml (1 tsp) lemon juice
- 8 slices whole wheat bread
- 30 ml (2 tbsp) butter at room temperature
- 8 slices Cheddar or Oka cheese
- Salt and pepper to taste
Directives
- Preheat panini grill or large skillet on medium heat.
- Thinly slice the endives and remove the base.
- In a large bowl, combine endives, pear, lemon juice, salt and pepper. Set aside.
- Butter bread slices on one side only, then lay on work surface butter-side down. Top each with a slice of cheese and endive-pear mix. Make into sandwiches.
- Transfer to panini grill and toast 5 minutes. If using a skillet, cook 2-3 minutes per side.
Variation
You can replace the pear with an apple and/or add precooked bacon.
